Ordering Jain: what actually changes

We get asked this a lot, so here is the honest version of what a Jain order means in our kitchen.

No onion, no garlic

Both come out entirely. In dishes built on an onion-garlic base, that is not a subtraction — the whole gravy gets rebuilt around asafoetida, ginger and tomato so it still tastes like something.

No root vegetables

Potato comes out too, which affects more of the menu than people expect. We will tell you honestly which dishes work well without it and which we would rather steer you away from.

Prepared separately

Separate pans, separate utensils. Tell us when you order rather than at the counter so we can set it up properly instead of improvising.
