One kitchen, one standard, and a very specific idea of how a kulcha should taste.
Amritsar, brought over properly
Amritsari Chatore exists because the food we grew up with was not easy to find here the way we remembered it. Not the ingredients — those you can buy. The method.
A kulcha made to order tastes nothing like one made an hour ago. Masala ground this week tastes nothing like masala ground last season. Those are not shortcuts you can take and still call it the same dish, so we do not take them.

Three rules
Nothing held over
Sweets are made each morning. Whatever is left at close does not come back the next day.
Ground in-house
Whole spices, roasted and ground here in small lots, because pre-ground loses its nose fast.
Cooked to order
Kulchas start when you order. It takes twelve minutes longer and it is the whole point.
